Il nome di questo vitigno deriva dal paese della Borgogna in cui ebbe origine e da cui si diffuse anche in Italia. Suo habitat ideale sono le pendici collinari assolate e quindi si è perfettamente ambientato nel Goriziano, dove ha acquisito profumi e sapori originali e preziosi. Oggi prodotto in varie zone del Friuli, lo Chardonnay della Cantina Produttori Cormòns è ottenuto da viti le cui barbatelle sono state direttamente importate dalle zone dello Champagne e della Borgogna.
Grande vino, piacevolissimo, elegante, di un color giallo carico, tanto ben strutturato da essere utilizzato per fare da base a molti spumanti, anche per la sua acidità fissa superiore alla media. Ha un sapore fruttato; da giovane sprigiona profumi di mela e di pane fresco; di miele e pesca matura quando è invecchiato.
E'eccellente quale aperitivo; ideale con antipasti leggeri di pesce e di carne cruda, aragosta in bella vista, rane fritte, lumache in guazzetto, spaghetti ai frutti di mare. Sorprendente con minestre, risotti di erbe, pasta e fagioli. Va servito a 10-11° nella bella stagione e a 12-13° in autunno inverno, in un bicchiere a gambo alto, ampio e capace con la coppa a forma di tulipano.

| La macerazione avviene in appositi vinificatori di ultima generazione per avere un'estrazione selettiva dei complessi polifenolici. La durata della macerazione può variare in base alla qualità delle uve, ma generalmente è compresa tra 20/25 giorni. Durante questa delicata fase, si cerca di mantenere la temperatura intorno ai 26/28° in modo da avere una buona estrazione di polifenoli ed antociani ma anche una certa finezza olfattiva. Al termine della fermentazione, il vino, viene travasato e lasciato riposare in piccoli serbatoi di acciaio per circa tre mesi, in modo da svolgere naturalmente la fermentazione malolattica. Viene poi fatto maturare per dodici mesi in piccole botti di rovere nuove e successivamente affinato in bottiglia per altri tre mesi prima della commercializzazione. |

Vino tradizionale dalla forte tipicità e personalità, ottenuto esclusivamente da uve di Tocai Friulano, storico vitigno del Collio Goriziano messo a dimora in zona collinare, ventilata e in terreni di origine eocenica prevalentemente marnosi. La raccolta di queste uve è manuale, la pressatura soffice a cui segue un breve periodo di decantazione in totale assenza di anidride solforosa. L’avvio della fermentazione avviene in vasche di inox con innesto di pied de cuve a temperatura controllata. L’affinamento avviene sui lieviti per 8 mesi.
